Fazenda Cachoeria Da Grama has been in the Carvalho Dias family since 1890. Our first Brazil Single O release in over five years, this Arara lot was grown by Gabriel, the founder's great grandson. The lot was handpicked, placed on cloth to prevent contact with soil, dried on raised beds and patios, then moved to mechanical dryers. Finally, the coffee was stored in a climate-controlled warehouse with regulated humidity to preserve quality.
About
Fazenda Cachoeira da Grama has been in the Carvalho Dias family since 1890. Passed down through generations, fourth generation farmer Gabriel de Carvalho Dias manages the property which is currently owned by his father Lindolpho.
The farm is located in Vale Da Grama (The Grass Valley), a region well known as having the perfect terroir for coffee cultivation. The farm spans 411 hectares, with 84 hectares dedicated to coffee cultivation. Situated at 1,250 m.a.s.l, the farm grows varieties such as Yellow & Red Bourbon, Yellow & Red Catuaí, Yellow Catucaí, Mundo Novo, and Arara. The farm is named after a waterfall of the same name which is located within the farm.
The farm serves as a processing centre and a hub for research and development, focusing on variety selection, harvesting, processing, and drying methods. With a focus on quality and continuous improvement, the farm aims to become a reference in specialty coffee production. Social and environmental sustainability are central to the farm's management practices. Lindolpho initiated a program to plant native species, promoting ecological balance. Gabriel has also been responsible for various initiatives for his farm and their fellow coffee growing neighbours in the region and has become a respected leader.
Gabriel is an agronomic engineer by trade, and has won multiple Cup of Excellence awards and many local and national coffee competitions. Additionally, the farm provides facilities for its employees, including a school, a club, and a full-sized soccer field.
This Arara lot was hand-picked, with extended cloth placed on the ground to prevent the beans from coming into direct contact with the soil. Once harvested, the coffee cherries are dried on raised beds and covered patios until they reach 20% moisture content. They are then transferred to mechanical dryers to reduce the moisture level to 11%. Finally, the coffee is stored in a controlled warehouse environment, free from odors and with regulated humidity levels to preserve its quality.
The Variety
Arara is a newer variety developed by Fundação Procafé in Brazil, that’s prized for its high-scoring cup profile combined with resilience and productivity. A cross between Yellow Catuai and Obatã (a Timor hybrid) the Arara grows as a yellow fruit with large-sized beans. It has high resistance to Coffee Leaf Rust (CLR), good productivity, high quality potential and compact trees that make it easier to harvest.
