Introducing Red Gesha from Cofinet’s own farm, Jardines Del Edén, where some of the world’s rarest coffee varieties are grown. This coffee is a culmination of the journey we’ve been on this year, from sharing with you some of the best coffees we’ve ever tasted, to experiencing Embassy’s first origin trip and starting to build direct relationships with producers.
We've been lucky enough to source the only box of this coffee available to New Zealand, and it's now available in limited quantities.

About
Perched high in the mountains of Pijao, Quindío, Jardines del Edén is Cofinet’s experimental farm, owned by The Arcila brothers. The team at Jardines are dedicated to cultivating a range of exotic varieties and refining some of the industry’s most innovative processing methods. The farm’s unique combination of altitude, quality volcanic soil, and the microclimate in the highlands provides an ideal environment for the rare and exotic varieties they grow, which thrive under the precise and sustainable farming practices, which are designed to showcase the full potential of these exquisite coffees.
For this lot, the team of pickers harvest only the ripest Red Gesha cherries, which are then carefully transported to Cofinet’s processing centre, La Pradera. To preserve their freshness, the cherries travel in GrainPro bags or suitable containers during the cool early morning hours, a crucial step to prevent over-fermentation.
Upon arrival, they are floated in water tanks to remove low-density beans. The water used in this stage is recycled for additional batches, and once it can no longer be reused, it passes through a natural filtration system of specialised tanks and grass beds before being released as oxygen. This ensures that no contaminated water leaves the facility, maintaining a fully sustainable and environmentally conscious process. After floating, the cherries undergo meticulous hand-sorting to remove any unripe or faulty fruit. For this natural processed lot, the cherries are exposed to a 45 hour aerobic fermentation, a method that draws out the variety’s inherent sweetness and complexity. They are then dried on raised beds inside temperature controlled greenhouses, being turned regularly over 8–12 days for uniform drying.
The resulting cup is clean, complex, and refined, showcasing stewed-fruit sweetness, delicate floral notes, and a lingering aftertaste. This coffee is one of the finest examples we have tasted thus far of Cofinet’s dedication to precision and quality at both Jardines del Edén and La Pradera.
The variety
Gesha, often spelled "Geisha," is one of the most celebrated coffee varieties in the world, known for its exceptional cup profile and record-breaking auction prices.
Originally discovered in the 1930s in Ethiopia’s Gori Gesha Forest, seeds were sent to Tanzania and later to Costa Rica, where they were catalogued to preserve coffee genetics.
Gesha is a family of very similar related varieties, including Red Gesha and Yellow Gesha. Each version of the variety has distinct characteristics: Red Gesha produces red cherries at full ripeness, with deeper fruit-forward sweetness, layered floral notes, and a refined body, while other Gesha lines, like Yellow Gesha, often have lighter, more delicate cup profiles.
At Jardines del Edén, Gesha was first planted in 2019, cultivated with care and precision. Years of meticulous attention have produced a coffee that captivates the senses, offering a clean, complex, and vibrant cup.
Red Gesha’s unique characteristics, from its red-fruited appearance to its distinctive flavour profile, showcase both the variety and the farm’s craft, delivering an unforgettable tasting experience.
