Better Coffee | APAX Lab Mineral Concentrates

Since 98% of coffee is water, it's a pretty important factor in how your brew tastes. Minerals in water change the structure, texture and clarity of taste, and generally, water straight from the tap doesn't have the ideal mineral levels for maximising flavour.

The "water for coffee" topic is quite a rabbit hole - one our Head of Coffee James has happily gone down in recent months to explore the science behind water for brewing. 

There's lots of more in-depth water science on the APAX Labs website, and also in a couple of books we carry* but the legends at APAX Lab have made these drops as approachable as possible, meaning anyone from home brewers to World Brewers Cup Championship competitors can elevate their brew.

Likening the drops to food seasonings, rather than change the flavour of your brew, they’ll enhance it using three different formulations of minerals. APAX Lab suggests adding a couple of drops of TONIK to aid brightness and acidity, JAMM for roundness and sweetness, and LYLAC for florals and silky texture.

We are now using APAX Labs mineral concentrates at Coffee Embassy Cellar Door and roastery to elevate the cup profile of our pour over coffees. James has provided some recipes designed as a starting point for using these drops which can be found on any of our single origin coffee pages.
